Jeff's famous spicy guacamole

  • 1 large ripe avacado, peeled & mashed (we usually use 2)
  • 1 T fresh lemon juice (or real lemon)
  • 1/2 onion or so (sweet onions work well)
  • 1/4 C sour cream (or more if really large avacado)
  • 1/4 t salt (or more)
  • 1/4 t chili powder (this is a key ingredient!)
  • dash hot pepper sauce or tabasco
  • 1/2 t garlic salt or minced garlic
  • 1 small tomato finely diced
  • serano or red pepper to taste (for heat!)
I like to let the guac sit at least overnight before it tastes good to me, but this varies based on the avacado's ripeness. Nikki will eat it straight up. Good luck!

Beth's beautiful brownies

Makes 24 brownies
  • Preheat oven to 350 degrees
  • In a large (4 quart)sauce pan, melt 2 ½ cubes of salted butter
  • Remove butter from heat and add ¾ cup Hershey’s cocoa, stir
  • Add 2 cups sugar and stir
  • Add 4 eggs (one at a time) and stir after each
  • Blend in 1 ½ cups flour with wooden spoon
  • Add a little less than ½ tsp of salt
  • Add 1 tsp of vanilla
  • Blend in 2 cups of chocolate chips
  • Pour mixture into buttered 9 x 12 pan
  • Bake at 350 degrees for about 23-25 minutes (depending on oven)
Best served with vanilla ice cream! Enjoy!

Ruth's gooey chocolatey peanut butter bars

Prep and cook time 40 minutes. Makes 12 bars.
  • 1/2 cup butter, softened
  • 1/3 cup sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1/3 cup smooth peanut butter
  • 1/2 tsp. vanilla
  • 1/4 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1/4 cup wheat germ
  • 1 cup rolled oats
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 package (6 oz) semisweet chocolate chips

  1. Preheat oven to 350. In a large bowl with an electrict mixer on medium speed, beat butter with sugars until smooth. Beat in egg, peanut butter, and vanilla until well blended.
  2. In another bowl, whisk together flours, wheat germ, oats, baking soda, and salt; stir or beat into butter mixture until smooth, scraping down sides of bowl as needed. Stir in chocolate chips.
  3. Spread dough evenly in a buttered 8-inch square baking pan. Bake until pale golden brown, 25 to 30 minutes. Let cool on a rack about 10 minutes, then cut into 12 pieces. Let cool completely.

Rebekah's Crazy Coffee Cake

Heather's Righteous Rhubarb Cake

  • 1.5 cups raw rhubarb cut fine
  • 1 cup brown sugar
  • 1/2 cup white sugar ( I used evaporated cane juice)
  • 1 egg
  • 1/2 cup butter for margarine
  • 1 cup applesauce
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 cups flour (I used 1 cup white flour and 1 cup whole wheat pastry flour)
In large mixing bowl, cream sugars and butter, and egg and salt. Stir in apple sauce, soda, vanilla and flour. Add rhubarb, mix. Pour in prepared 9x13x2 in. baking pan and sprinkle 1/4 cup sugar and 1 tsp cinnamon on top. (I used evap cane juice that was crystalized, which Rebekah pointed out gave it that nice "crunch.") Bake at 375 for 30 to 35 min. The cake is very moist and needs no frosting. Serve with vanilla ice cream if desired.
